Mini Pavlovas with Cream and Passionfruit

4 large organic egg whites

150 grams of caster sugar

Whipping Cream

Icing sugar

Fresh Passionfruit

Raspberries and Strawberries

Mint leaves

Pre heat oven on bake to 140 degrees

Beat egg whites until soft peaks form, then slowly add caster sugar a tablespoon at a time, beating after each addition. When ready the mixture should be thick and glossy and form peaks that just fold over on the tips.

Scoop heaped dessertspoons onto tray lined with baking paper and bake for just under an hour. When they easily lift off the paper and you can tap the bottom for a hollow sound they are ready. Turn oven off and leave pav's in the oven until completely cooled.

Serve with lashings of whipped cream, fresh passionfruit, raspberries and strawberries.
