Easy Vanilla Cheese cake

Ingredients:

100g Digestive Biscuits

50g Unsalted Butter melted

50g Demerara Sugar

500g Full Fat Cream Cheese

100g Icing Sugar

200ml Double Cream

1 Tsp Vanilla Extract

Strawberries (or any fruit you like to decorate)

Method:

1. Bash the biscuits in a bowl and mix in the sugar.

2. Pour the melted butter into the crumb mix and press into the base of a spring bottom round tin.

3. Beat the cream cheese.

4. Add the icing sugar, vanilla and cream then beat again.

5. Cover the biscuit base and pop into the fridge for 1 hour.

6. Remove from the fridge just before serving, carefully take the bottom from the tin and decorate with your fruit any way you fancy.

A little about the Bateman gang:

My name is Pippa Bateman, I am wife to Greg and Mum to Maddie (3 Years) and George (2 Years). We first arrived in Leicester summer 2015 when Greg began his contract with Leicester Tigers.

Life in the rugby world often means moving home and making new friends. One thing I have learnt through this process is we all have something in common.. Our love for food. Our men love food and many of us ladies do too! It has become our way to socialise, whether we are inviting people over to share a meal or heading out to a restaurant for a post match treat.

As a family unit we love to end the day having dinner together so many of my recipes have to suit Greg's nutritional needs and those of the little people! I grew up with my Mum making dinners from scratch which I am thankful for as this is the norm for me. I also have fond memories of visiting my dear Grandma as a child and always finding some home baked treats in her special tin in the kitchen. As I got older she shared some of her recipes with me which I treasure.

I love to cook but have found it quite a task since having children. Maddie and George are 14 months apart and in the beginning when brain power and energy were low thinking of meals and preparing them for the family became less enjoyable...this was before I discovered the powers of a slow cooker. I could prep a healthy meal at any point in the day that was convenient and we'd have a healthy dinner ready when hungry tummies started calling.

My absolute favourite thing to do is bake! I have made numerous trays of chocolate brownies for the team that have been snuck into the changing rooms (oops!) on the boys toughest training day of the week.. after all its all about balance right?!

I can only hope that Mine and Greg's passion for cooking, eating together and shared knowledge of nutrition will be a treasured part of Maddie and George's lives.

Cooking leisurely with Megan today has rekindled my love for making and preparing food. I look forward to doing it again!
