Mini chorizo and avocado wraps with chunky salsa.
Ingredients:
Mini Wraps
Avocado
Sliced Chorizo
70g Cherry Vine Tomatoes
Lime
Coriander
Red onion
olive oil
(small cocktail sticks to hold the wraps together)
Method:
1. Mash the avocado with a fork and spread on the wrap, add a layer of chorizo slices, roll it up and chop in half using the cocktail sticks to hold the wrap.
2. Chop the tomatoes into quarters, dice the red onion and roughly chop a few leaves of coriander.
3. drizzle a little olive oil and a squeeze of fresh lime juice, mix it into the tomato and onion for your salsa.
