Malva Pudding


We have just recently been back to South Africa for our holiday and we just had the most fantastic time with our families and friends. One week was spent at the in laws farm in Muden where my sister in law Emma made us this delicious South African classic "Malva Pudding". I just had to have this recipe and give it a go in my kitchen. Thanks Em for sending it over to me in the UK. I made it for a couple of South African friends visiting us in our new home and it was a hit. Love recipes that remind you of a taste of home.

Ingredients

Batter

20 ml butter

250 ml caster sugar

2 eggs

12.5 ml apricot jam

5ml bicarb

125ml milk

5 ml brown vinegar

250 ml cake flour

Sauce

250 ml cream

180 ml sugar

125g butter

125ml boiling water

5ml vanilla essence

Method.

1. Preheat the oven to 180 degrees

2. Grease proof an oven proof dish with some butter

3. Cream the butter and sugar together

4. Add in the eggs, one at a time

5. Add the jam

6. Blend in a small bowl, bicarb, milk and vinegar

7. Add sifted flour to the butter mixture

8. Add in the milk mixture, fold in

9. Pour into the dish and bake for 45 minutes or until a skewer comes out clean when inserted into the centre.

Sauce

1. Mix all ingredients together in a sauce pan and bring to boil

2. Pour the sauce over the pudding as soon as it comes out, you can use your skewer to make little holes in the malva

Serve warm with custard and Ice-cream
