Carbonara


We don’t eat a lot of pasta in the Rhodes household, in fact we never did… Until I discovered this pasta dish-it is the perfect lazy dinner recipe and is my Sunday go-to dinner. It is shockingly easy and simple, but trust me it is a winner! I make sure I always got some bacon and pasta on hand so I can make this anytime, in just minutes.

SERVES 4

Ingredients

1 Pack of Bacon or Pancetta, diced

2 Egg Yolks ( I do 3 to make it extra creamy)

1 Large Egg

1 1/2 Cups finely grated Parmesan Cheese, Plus more as needed

3/4 pound Bucatini (Must use Bucatini Pasta)

1tsp Black Pepper, and to taste

Method

1. Bring Large pot of heavily salted water to boil over high heat for the pasta.

2. In a saute’ pan, cook the bacon over medium heat until crispy, about 5-7 minutes.

3. Combine the egg yolks, egg, parmesan and pepper in a large bowl.

4. Cook the pasta according to the package instructions until al delete. Reserve 1 cup of the hot pasta cooking water (the temp is important because you going to use it to cook the egg) and set aside.

5. Next drain the pasta, and add it to the bowl with the cheese and eggs, tossing immediately to mix all together.

6. Add the bacon and any fat from the pan to the bowl, toss to coat, and add the pasta water 1 tablespoon at a time until the sauce reaches a creamy consistency (It usually takes about 1/4 cup).

7. Add extra cheese, pepper and salt to taste if need be.
