Chicken Stacks


Ingredients

4x Chicken breasts

1 packet of spinach leaves

1 tin lentils

2 sweet potato's

1 tin basil and tomato sauce

1 red onion

Feta cheese

Balsamic Vinegar

Basil Pesto

Method

1. Preheat the oven to 180 degrees

2. Slice the chicken breasts down the middle

3. Add a spoon full of basil pesto in the middle of the chicken breast with a few spinach leaves

5. Place breasts in an oven dish and pour over the tomato sauce

6. Cook in the oven for 45 minutes along with the sweet potato wedges in another dish, which you must drizzlw with some olive oil and add salt and pepper

7. Saute the onions and add balsamic vinegar until cooked through and caramalized

8. Once the chicken is done you can heat up the lentils in the microwave and get everything plated.

9. Add a bunch of spinach leaves then add some spoon fulls of lentils add the potato wedges, and chicken breast, add the onions and sprinkle over the feta cheese and the remainder of the tomato sauce
