White Choc Brownies


Ingredients

250g butter

2 cups caster sugar

4 eggs

1 1/2 cups plain flour

3/4 cup coco powder

1 small block of white chocolate Icing sugar to dust

METHOD

1.Preheat oven to 180ºC. Line a 20 x 30cm (base measurement) slab pan with non-stick baking paper.

2. Whisk soft butter and sugar.

3. Add the eggs, 1 at a time, and stir until mixture is thick and glossy.

4. Sift the flour and cocoa powder add to the wet mixture and stir until well combined

5. Spread over the base of the prepared pan.

6. Break white chocolate and place into the mixture then run a knife or soon over the mix to cover the white chocolate 7. Bake for 30 minutes or until a skewer inserted into the centre comes out clean.

8. Set aside in the pan to cool completely.

9. Cut into pieces and dust with cocoa powder.

TIP; this recipe is super easy to convert to a gluten free recipe simply swap out the flour for an equal mixed amount of coconut, almond and quinoa flour I find this mix of gluten free flours the best in baking Serve warm with chopped strawberries and mix a little chopped mint into the strawberries lightly dust with icing sugar if the strawberries are tart and why not a scoop of vanilla ice cream too
