Mini Lemon Meringue Bites
I asked my husband the other day what he would like me to make for him and he has been craving a good lemon meringue pie. So I decide to whip up some mini lemon meringue bites for a change. The base is a mixture of Marie biscuits and butter then topped with a spoon full of home made lemon curd and a dollop of meringue on top. I wanted to incorporate Marie biscuits because my mom is visiting us in Montpellier and bought some Marie Biscuits for us all the way from SA, lucky me.
Ingredients makes 12
Lemon Curd
2 eggs
2 egg yolks
1/2 cup sugar - I used half brown and half white
2 tsp lemon zest- This is two lemons
6 Tbsp lemon juice - From the two lemons
Marie Biscuit Crust
Half a packet of Marie biscuits
80 g melted butter- you can use more if the crushed Marie biscuits are not sticking together
Meringue
2 egg whites
1/2 cup sugar
Method.
Lemon Curd
1. In a large heatproof bowl, you need to mix together the eggs and egs yolk, sugar, lemon zest and lemon juice
2. Place over a saucepan of simmering water and keep stirring
3. The mixture will thicken to a custard consistency, you may need to add an extra egg yolk If the mixture is not thickening.
4. Once thickened, pour the lemon curd into a sieve and into a small bowl
5. Cove the lemon curd and set in the fridge for an hour
Marie Biscuit Crust
1. In a food processor add the Marie Biscuits to be crushed till fine
2. Pour into a bowl and add the melted butter
3. Spoon out the Marie Biscuits into the mini tart moulds
4. Set in the fridge
Meringue
1. Separate the egg whites into a bowl
2. Beat the egg whites till soft peaks with an electric beater
3. Add in the sugar and beat till the mixture is shiny and forms stiff peaks
Take the mini crusts out the fridge, take a spoon full of the lemon curd and place on top on the Marie biscuits then a dollop of Meringue, place in the oven on grill for 2 minutes or until the meringue is golden brown
