Spagetthi Zucchini with Bacon, Spinach and Goats Cheese


Spaghetti Squash with Bacon, Spinach and Goats Cheese.

(serves 2)

Ingredients:

1 spaghetti squash or Zucchini (the bigger the better)

1 tablespoon olive oil

6 slices bacon, cut in 3cm pieces

1 tablespoon red wine vinegar

1 tablespoon maple syrup (or agave or even honey)

1 bag (about 150g) baby spinach

About 60 grams soft goats cheese, crumbled

Salt & pepper

Method:

1. Preheat the oven to 200°C and line a rimmed baking sheet with parchment paper.

2. Cut about 1,5cm off of the top and bottom of the spaghetti squash, and throw those pieces away. Cut the squash into rings about 2,5 cm thick and run your knife around the inside to cut the seeds out.

3. Coat both sides with olive oil and place on the baking sheet. Season with salt & pepper on both sides

4. Roast in the preheated oven until the squash is tender, about 45 minutes. When the squash is done, set it aside while you do the rest, it'll be easier to handle once it cooled down.

5. Heat a large pan over medium heat and add the bacon slices. Cook, stirring often until the edges of the bacon start to brown slightly, about 3 minutes. Turn the heat down and continue to cook until the bacon is crispy and the fat has melted down.

6. When the bacon is done, turn the heat back up and and the red wine vinegar, while stirring and scraping the bottom of the pan. This will deglaze your pan, so all the good stuff ends up on your food and not the bottom of the pan.

7. After about 30 seconds, turn the heat back down and add the maple syrup. Stir everything together.

8. Then add the spinach, one handful at a time, until the spinach wilts. When everything is wilted and combined, turn the heat off and let it rest while you work with the squash.

9. Peel the skin away from the squash, then use a fork or your hands to pull the strands apart, adding them to the pan as you go. (They will resemble strands of spaghetti)

10. When all of the squash is in the pan, add the goats cheese and toss everything together just to combine.

11. Divide between two plates and serve immediately
