Peach tarts with goats cheese and honey

Ingredients:
1 sheet frozen puff pastry, thawed
500g ripe, sweet peaches, pitted and cut into 1,5cm wedges
2 tablespoons honey
100g goats cheese, softened
freshly ground black pepper
Method:
1. Preheat the oven to 220°C. Line a baking sheet with parchment paper.
2. Cut pastry into six 10cm squares and place on prepared baking sheet.
3. Prick each square all over with a fork
4. Spread each square with a spoonful of goats cheese leaving a 1cm border
5. Top each square with peaches and season with a few grinds of black pepper.
6. Bake for 20 to 25 minutes, rotating the pan halfway through, or until the pastry is puffed and golden and the peaches are soft.
7. Drizzle with honey just before serving.
