Summer Curry Chicken Salad
I made this salad for dinner last night and it was a perfect meal to eat on a very hot summers night in Montpellier. It is the season for Avo's and these ripe beautiful Avo's are a great combination with the curry chicken. This salad is filled with flavour and very healthy ingredients.
So what is in my summer salad.
Ingredients 2 people
3 Chicken Fillets
3 Tbsp Greek yoghurt
2 tsp Curry powder
2 tsp Cayenne pepper
Rosa tomatoes
Cucumber
Rocket
Lettuce
Feta
1 cup Lentils
1 Avo
Method
1. Slice the chicken filets into pieces.
2. Make the marinade in a bowl with , greek yoghurt, curry powder and cayenne pepper, add some salt and pepper
3. Mix the chicken into the marinade
4. In a frying pan, add some olive oil, fry the chicken till cooked
5. Slice the Avo, some tomato's and cucumber
6. Place a hand full of lettuce and a hand full of rocket into a bowl
7. Add half the lentils, tomato's, cucumber, avo and chicken and finally sprinkle over some feta.
8. I like to drizzle over some balsamic vinegar as a dressing.
