Mommy's Sunday Roast Chicken


So what are you making your your moms this Mothers day? Here is a simple but delicious dish for you to make. My moms best meal is a Roast Chicken, so I thought for Sunday I would be making this for her. I am so lucky to be back home in South Africa with my mom this mothers day. Just loving spending this time with my family. I will be baking a awesome Bee Sting cake for dessert. Watch out for my blog on Thursday.

This is my moms absolute favourite meal to eat, Roast chicken and its super easy to do. This is great for a Sunday roast served with a light salad, homemade hummus, betroot and cinnamon sweet potato's and butternut.

Chicken Roast

Ingredients

1 Chicken

Fresh Rosemary

Olive oil

Garlic

1 lemon

Salt

Pepper

Method

1. Finely chop up a bunch of rosemary

2. In a bowl add the rosemary, crushed garlic and olive oil, this will be the rub that you rub over the whole chicken.

3. Rub over the rosemary olive oil over the chicken

4. Season well with salt and pepper and some mixed herbs

5. Place a whole lemon inside the chicken

6. Place the chicken in a oven dish in the oven for 1hr 30 minutes on 180 degrees

7. Once the chicken is done, take out the oven and slice the lemon, squeeze half the lemon over the chicken.

Roasted Sweet potato and Butternut

Ingredients

2 large Sweet Potato's

1 butternut

Cinnamon

Nutmeg

Salt

Pepper

Olive Oil

1 onion

Method

1. Chop the butternut and sweet potato into even squares

2. Slice up the onion

3. Place in an oven proof dish

4. Drizzle over the olive oil, season with some cinnamon, salt and pepper

5. Into the oven with the chicken for 1hr 30 mins

Homemade Hummus

Ingredients

2 tsp lemon juice

1 tsp peanut butter

1 tsp cumin

fresh basil 8 leaves

200 ml greek yoghurt

1 tin chickpeas

salt

pepper

Method

1. Place all ingredients in a food processor and wiz away, just as easy as that

2. The hummus should be of a smooth texture, taste and see if you need to add any other extra ingredients but this combination is great.

This is also a lovely snack with some sliced carrots.
