Roast Pumpkin and Feta Salad


Ingredients

500 g pumpkin, pealed and cubed

3 Tbsp Olive Oil

1 Tsp Cinnamon

2-3 Cloves, crushed garlic

1 Red onion

250 g feta cheese

Salt and Pepper

1 Red onion

1/2 cup basil leaves finely shredded

1/2 cup Basil leaves

Hand full of fresh spinach leaves

Pine nuts

Dressing

3/4 Cup Olive oil

3/4 Cup Balsamic vinegar

2 Tsp liquid honey

1 tsp wholegrain mustard

Method

1. Preheat the oven to 200 degrees

2. Place pumpkin in a roasting dish

3. Drizzle with olive oil, sprinkle with cinnamon, crushed garlic, salt and pepper

4. Roast for approx 20 mins until cooked through

5. Place pumpkin in a salad bowl and toss through other ingredients

7. Add dressing

8. Sprinkle over with toasted pine nuts

Hello my name is Emma King and I am married to Chris King a kiwi rugby bloke who plied his rugby trade in Super 14 playing for the Crusaders and the Highlanders for 11 years. At very short notice in June 2014 we got offered an opportunity to come across to Montpellier in France and 6 weeks later we arrived with our 5 year old and 7 month old daughters. What an adventure its been! Travel, cuisine, wine, culture it really is so varied. I have been blown away by the selection of fresh produce and seafood that is available all year round. Coming from NZ where we can pay so much for fresh berries you just about need to lay-by them, I spend up each week in abundance for very little. The French are absolutely the masters of Patisserie cooking and its been amazing to Try all they offer. We spent one season in Montpellier and relocated to Pau in the Pyrenees so we have 5 different ski stations and Biarittz is on our doorstep. The opportunity to live here in France has been fantastic and it was a privilege as part of our experience to spend time and get to know the wonderful bunch of foreigners we had in Montpellier. We enjoyed many great meals and occasions together and Meg has a flair for producing some amazing food so when Meg asked me to contribute to her brilliant blog i was only too happy but i hope the recipes i have shared do her blog justice and can be enjoyed by many.
