Chicken Merivale


Ingredients

1 Chicken

2 Tbsp butter

2 Tbsp flour

1 Cup chicken stock

1 Cup milk

2 Cups soft bread crumbs

2 Tbsp butter

1 chopped onion

Mixed herbs

3 rashess of bacon

Salt and Pepper

Method

1. Boil chicken, keep stock

2. Pull chicken apart and place in a casserole dish

3. Make a roux sauce with 1st measure of butter , flour, stock and milk. Pour over the chicken

4. Combine breadcrumbs with butter, add onions and herbs to taste, sprinkle over the chicken and sauce, put chopped bacon on top

5. Cook at 180 degrees for an hour
