Lamb Curry Bunny Chow
BUNNY CHOW
Group 1 Spices
1 star anise!
1 cinnamon stick
3 whole cardamon pods
1/2 teaspoon fennel seeds
1/2 teaspoon cumin seeds
1/4 cup oil
1 chopped onion
Group 2 Spices
3 tablespoons garam masala
1 teaspoon ground coriander
1 teaspoon hot pepper (cayenne)
2 teaspoons tumeric
Group 3
2 chopped tomatoes 1kg leg of lamb or beef (cubes)
4 garlic cloves
2 teaspoons ground ginger
6 curry leaves (I just added 2 Bay leaves if no curry leaves available)
2-4 potatoes (cubed) fresh coriander leaves
Method
1. Fry Group 1 until onion soft
2. Add Group 2 and fry 3. Add tomatoes
4. Add meat, garlic, ginger and curry leaves
5. Add little water as needed
6. Simmer until meat tender
7. Add potatoes for last hour
8. Hollow out a loaf of bread and fill with the curry and sauce
