Caramelized French Duck Baguette


Are you wanting to try something different for lunch? Well try this recipe. I have loved experimenting with Duck, and this recipe is amazing and very french. You would think Duck would taste similar to chicken but its tastes quite similar to a piece of steak.

You can have duck many ways and these duck breasts have been pan fried with a caramelized fig sauce, so delicious. The crispy duck skin along with the sweet caramelized fig sauce brings the whole dish together. You can have the duck breast as is, but I wanted to add in the baguette along with some rocket. Bon Appetit! I was lucky to enjoy this meal with Mariza with a glass of french red wine, which compliments the dish perfectly.

Caramalised French Duck Baguette

Ingredients

2 Duck Breasts

4 Whole figs

Brown Sugar

Balsamic Vinegar

1 tsp Honey

Rocket

1 French baguette

Method. 1. Score the duck with a sharp knife diagonally over the skin 2. Add some butter to a hot pan 3. Place the duck skin side down for 7 minutes 4. Turn over for 5 minutes 5. Drizzle over the honey and balsamic dressing 6. Pan fry for another 2 Minutes skin side down this is for a medium rare duck breast. 7. Let the duck rest off the heat on a plate

8. Slice the Duck breast into even slices

9. Cut the Baguette into half, butter both sides

10. Place some rocket in the baguette and lay down the honey glazed duck breast on top of the rocket, slice the duck into pieces

11. Drizzle over the caramelized figs

Caramalised Fig Dressing

1. Cut the figs into quarters

2. Place them in a sauce pan on a medium heat with some olive oil

3. Let the figs sweat out their own juices

4. Sprinkle over 2 tsp of Sugar and drizzle over some balsamic vinegar

5. Let the figs caramalise

Honey and Balsamic Dressing

1. 3 tsp of honey

2. 4 tbsp of balsamic vinegar

3. Combine both into a bowl

4. You will drizzle this over the duck skin side up in the pan just before you take breasts off to rest.
