Tuna Salad with Homemade Mayo


I just love making different salads for lunch these days, with more time in the kitchen I have been able to experiment with different ingredients. I came up with this version of a tuna salad. It is simple, healthy and will keep you very satisfied for lunch. I never thought I could get pat to eat salads but he is loving all my new salad experiments and is a big fan.

Tuna Salad

Serves 2

Ingredients

Rocket leaves

Tin of Lentils

Tin of Chickpeas

10 Rosa Tomatoes

Feta Cheese

1 Tin of Tuna

Method for 1 salad

1. Place a handfull of rocket in salad bowl

2. Add half the chickpeas and half the lentils

3. Slice the tomato's in half add to the rocket

4. Place half of the tuna into a bowl and add three teaspoons of the homemade mayo and mix together, season with salt and pepper

5. Place the tuna on top on the salad and drizzle some more mayo over the salad and sprinkle over some feta.

Enjoy, I also like to add a drizzle of balsamic vinegar.

Homemade Mayo

2 Tsp Wholegrain Dijon Mustard Half a lemon200 ml olive oil

2 Tsp white wine vinegar

salt and pepper

1 egg

Method:

1. Add the egg, dijon mustard, and vinegar into a plastic measuring glass

2. With a hand held blender, blend the ingredients together then slowly pour in the olive oil

You will see the consistency thicken
