Easter Egg Chocolate Coffee and Vanilla Cake


Happy Easter Sunday to all my family, friends and followers, I hope you are having an amazing Easter time with your family and friends. I made a Easter Egg Chocolate, Coffee and Vanilla Cake for afternoon Easter tea with a few of our Montpellier friends.​

Chocolate coffee cake

Ingredients

2 cups plain flour

1 tsp salt

1 tsp baking soda

1 tsp baking powder

3/4 cup cocoa powder

2 cups sugar

1 cup veg oil

1 cup hot coffee

1 cup milk

2 eggs

1 tsp vanilla essence

Vanilla Cake

Ingredients

1 cup sugar

1/2 cup butter

2 eggs

2 tsp vanilla essence

2 tsp baking powder

1/2 cup milk

Cream cheese

300 g cream cheese

1/1/2 cups powdered sugar

Easter eggs to decorate

Method

Chocolate coffee cake

1. Combine the eggs and sugar together mix well

2, Add the milk, oil and vanilla essence

3. Add in one cup of hot black coffee

4. In a separate bowl, sift the flour, cocoa, baking powder and salt

5. Pour in the wet ingredients, fold into the mixture

6. Grease proof a cake tin, I used a 26 cm cake tin

7. Pour in the cake mixture

8. Place in the oven for 40 minutes at 180 degrees.

Method

Vanilla Cake

1. Combine the eggs, sugar,vanilla essence and melted butter

2. Add in the milk

3. In a separate bowl sift the flour and baking powder

4. Pour in the wet ingredients, fold into the mixture

5. Grease proof a cake tin, I used the same cake tin as above

6. Place in the oven for 35 minutes at 180 degrees

Cream Cheese

1. Combine all ingredients together until smooth

Once the cakes have cooled down, divide the cream cheese in half spread half over the chocolate cake, then place the vanilla cake on top and spread over the remainder of the cream cheese. Top the cream cheese with easter eggs.
