Guinness Chocolate Cake
Happy St Patrick's day everyone. I thought I would attempt to make a Guinness Chocolate cake. Not going to lie I have just had a piece and it is really delicious, creamy, choclaty and oh so yum. Hope you all have a great St Paddys day. I made this cake for the rugby boys where they will be enjoying a few Guinness's at our Irish pub O'Carolans in Montpellier.
Ingredients
1 Cup of guinness beer
1/2 cup butter
2 cups sugar
3/4 cup cocoa
2 eggs
150 ml greek yoghurt
3 tsp vanilla essence
2 cups flour
2 tsp baking powder
White Chocolate Cream Cheese frosting
600ml cream cheese
4 tsp vanilla essence
2 cups powdered sugar
200 g cocnut white chocolate
Method
pre-heat the oven to 180 degrees
1. In a sauce pan heat up the guinness beer and butter
2. In a bowl cream together the eggs and sugar
3. Add in the vanilla essence and greek yoghurt
4. Pour in the guinness once heated
5. Sift in the cocoa then flour and baking powder
7. Fold into the mixture
8. Grease a 26 cm cake tin
9. Pour into the cake tin and place in the oven for 40 minutes
10. Once the cake is out of the oven take it out of the cake tin and let it cool down
11. Once the cake has cooled down you can cut the cake in half, the way I do this is with measure a finger from the bottom of the cake and place a tooth pick at the top of your finger you can repeat this about 6 times around the cake, then using a sharp knive slice through the cake using the toothipicks as guidelines.
12. Smear over half the cream cheese on one layer of the cake
13. With the remaining half of the chocolate you can grate and sprinkle over the top of the cake.
Cream Cheese Frosting
1. In a bowl mix all ingredients together until smooth
2. Use half the chocolate for the cream cheese, you need to melt it and fold into the cream cheese mixture
3.Split the cream cheese into half one for the middle layer and one for the top layer
