Chicken, Peppers and Mash
Ingredients
6 Chicken thighs
3 Peppers, yellow, green and red
1 Onion
4 Potato's
2 tomato's
1/2 tsp oregano
1/2 tsp romarin
1/2 tsp thym
1/2 mixed herbs
salt and pepper
Method
1. Add some olive oil to a frying pan
2. Place the chicken thighs skin side down to brown for three minutes then turn around for another three minutes
3. While the chicken is cooking at boiling water and salt to a pot and add the potato's
4. Take the chicken off the pan and lay to rest on a plate
5. Slice up the onions, peppers and tomato's
6. Add them to the same pan that you were cooking the chicken in
7. Add the herbs and salt and pepper the veggies
8. Allow to simmer for 3 minutes
9. Finally add the chicken pack to the pan and cook on both sides for 10 minutes
10. The chicken should be on the pan simmering for 25 minutes if you have a lid cover the chicken while simmering
11. Once the potato's are done, take them out of the water, peel and put back in the pot to be mashed with a bit of butter and milk
12. To serve up add some mash on the plate along with a chicken thigh and veggie sauce.
