Coconut crusted salmon with coconut sweet chilli sauce

Ingredients

2 salmon pieces

1/4 cup sweet chilli sauce

2 eggs

1/2 cup coconut

1/2 cup maiziena

salt and pepper

paprika

1 tbls oil

Method

  1. Mix together the maiziena, salt and pepper and paprika. Put aside.

  2. Whisk the two eggs in two separate bowls and dip the salmon in to one of the egg mixtures. Dip the salmon into the maiziena mixture until fully covered.

  3. Dip in to the other egg mixture and cover in coconut.

  4. Fry until cooked and the salmon is crispy. Drizzle over some sweet chilli sauce
