Vanilla Cream Cheese Cupcakes


One of my special friends and rugby wife in Montpellier is due to have her baby in April, so we threw her a pink and blue surprise baby shower at my home. I had a great time in the kitchen preparing some delicious treats for a morning baby shower tea with the rugby wives abroad. I hope you had a great morning Jax, we all cannot wait to meet the new addition to the Donnelly family.

So what did I get up to in the kitchen? I made my non sugar energy bars, Date balls, some pastries, very cute pink and blue vanilla cream cheese cupcakes and a fruit pizza. It was really was such a fun morning with the girls just loved hosting such a special morning for Jax.

Ingredients

6 cupcakes

120 g flour

140 g brown sugar

1 tsp baking powder

40 g butter

120 ml milk

1 egg

1 tsp vanilla essence

Cream cheese Icing

Red or blue food colouring

125 g cream cheese

1 cup powdered sugar

1 tsp vanilla essence

few drops of food colouring

Method - preheat oven to 180 degrees

1. Whisk the egg in a bowl and add the sugar, whisk together

2. Add the vanilla essence, melted butter and milk

3. Add the flour, baking powder and fold into the mixture

4. I added a bit of the food colouring to the mixture but you don't need to do that.

5. Grease proof a muffin tin

6. Spoon the mixture into the muffin tin

7. Bake in the oven for 25 minutes

Cream Cheese Icing

1. In a bowl add the cream cheese, powdered sugar, vanilla essence and a few drops of food colouring until you get your desired colour, beat together until smooth.

2. Once the cupcakes are out of the oven and cooled down you can spoon over the cream cheese icing equally on all 6 cupcakes.

M&M Cupcakes

1. Use the exact same recipe as above and add 1,5 tsp of Cocoa and 5 M&M's to each cupcake before baking.
