Hummingbird Birthday Cake
It was my husbands birthday yesterday and we decided to celebrate his birthday at our home in Montpellier. I asked pat last week to choose a cake that he would like me to bake for his 29th birthday. He chose the hummingbird cake. I was very excited to make this as I have never attempted this cake before. I did however come up with my very own version of the hummingbird cake. So this cake is fulled with banana, Crushed pineapple and almonds, topped with a white chocolate and coconut cream cheese icing. The combination of flavours along with the extra juice from the pineapple makes the cake super delicious. Happy birthday to my Husband, it really was a great celebration with our friends in Montpellier.
Ingredients
100 g butter
350 g flour
1.5 tsp baking powder
3 large bananas
350 g brown sugar
1 tin of pineapple chunks 425 g
2 large eggs
1 tsp vanilla essence
50 g Almonds
Icing
300 g cream cheese
200 g white coconut chocolate
1 cup icing sugar
Method
1. Grease a 26 cm cake tin with some butter
2. Pre-heat the oven to 180 degrees
3. In a bowl, whisk the eggs and add the sugar
4. Melt the butter and add to the sugar mixture
5. Add in the vanilla essence
6. In a food blender, finally chop the almonds then add to the wet mixture
7. In the same blender, finally chop the pineapple then add to the wet mixture, stir all together
8. Mash the banana in a seperate bowl then add to the wet mixture
9. Sift in the flour and and baking powder to the wet mixture, mix together
10. Pour the mixture into the cake tin and place in the oven for 40-45 minutes
Icing
1. In a bowl add the cream cheese and icing sugar, combine well
2. Break the bar of chocolate in half and melt in the microwave for a few seconds, pour the melted chocolate into the cream cheese
3. Grate the remaining other half of the chocolate
4. Spread over the cream cheese over the cake and sprinkle the grated chocolate over the top.
