Sugar Free Fruit and Nut Energy Bars


So I recently posted my South African crunchie recipe and wanted to come up with something as tasty but without the sugar. So I came up with these Sugar free fruit and nut energy bars. They are packed with oats, almonds, pecan nuts, dates, Cranberries and some honey. They are great for breakfast or as a healthy snack.

I made a delicious strawberry, kiwi and banana smoothie to go with the energy bars. Hope you enjoy the recipes and give them a try. They are super easy and very rewarding.

Ingredients

Sugar free fruit energy bars

2 cups of oats

1/3 cup honey

1 scoop protein powder

10 dates chopped

1/2 cup cranberries

1/3 cup almonds chopped

1/3 cup pecan nuts

1 tsp vanilla essence

1/2 cup of Almond Milk

Method

Preheat the oven to 200 degrees

1. Combine all ingredients in a bowl, you can use your hands to mix everything together

2. Place a sheet on tin foil in into the baking dish and line with some spray and cook, this makes it easier to take the bars out

3. Press down the mixture into the baking dish with the back of a table spoon

4. Place in the oven for 28 minutes or a little longer depending on how crunchy you would like your bars.

5. Once they are taken out the oven, pull up the tin foil and take out the dish, you can use a sharp knife to divide into bars and place each bar on a cooling rack.

Strawberry, Kiwi and Banana Smoothie

Ingredients

Serving for two

1 Kiwi

5 Strawberries

1 Banana

1 Cup Almond Milk

125ml Natural Yoghurt

Method

1. Mix all ingredients in a smoothie blender

2. Pour into two glasses and enjoy.
