Left over "Roast Chicken" Quiche


So for my left over quiche I used the following left overs from my kitchen.

Ingredients

2x Roast chicken breasts

1 red onion

Red wine vinegar

Half a bag of frozen spinach

15 Rosa tomato's

Grated Mozzarella cheese

2 eggs

1 cup low fat milk

1 roll puff pastry ​

To bake

1. Preheat oven to 180 degree

2. Prick the bottom and sides of the pastry with a fork - particularly where

the bottom and sides meet.

3. Fit a piece of foil onto the unbaked pastry and fill with some uncooked rice

Bake 15 minutes or until golden brown

Method for the filling

1. Evenly slice the one red onion into rings

2. In a sauce pan heat up some olive oil and fry the onions until they are caramelised

3. Drizzle over some red wine vinegar and let the onions sweat out in their own juices

4. In a seperate pan heat up some olive oil and add the frozen spinach, fry until cooked

(you can pour the spinach into a collindar to get rid of some excess water)

5. Slice the rosa tomato's in half

6. In a seperate bowl combine the milk and whisk in the egg

7. Season with salt and pepper

8. Slice up the left over roast chicken into squares

Final Steps

1. Take the quiche crust out of the oven

2. Evenly distribute the spinach on the surface of the crust

3. Spoon over the caramelised onions

4. Half the rosa tomato's and chicken and distribute over onions

5. Sprinkle over the mozzarella cheese

6. Pour in the milk and egg mixture

7. Place in the oven for about 45 minutes

Serve warm with a rocket salad, drizzeled with some balsamic vinegar.

Great for a light dinner.

Some days you just don't feel like going to the shops to get stuff for dinner, this is a good time to dig into your fridge and use left overs from the day before to come up with something tasty. So that is what I did. I made a roast chicken the night before and thought a yummy quiche would be a good idea. I always have puff pastry in the freezer which makes making a quiche so convenient. All you need on top of that is your eggs, milk, cheese, and left over vegetables. I'm sure everyone one has those ingredients in their fridge.
