Fruit Pizza with Coconut Whipped cream
Cookie Dough
Ingredients
225g butter
200g icing sugar
2 eggs
500g flour
1 can coconut cream
500g berries
1/2 cup icing sugar
1/4 cup lemon juice
1/4 cup chopped fresh mint
Caramel syrup
Method
Mix together cookie dough ingredients until dough forms.
Roll out onto a baking tray , smeer with 1/4 butter.
Sprinkle over shredded nuts and cinnamon sugar.
Bake for 25-30 min till golden brown.
Cut up the berries and mix with 1/4 cup icing sugar, lemon juice and mint. Place in the fridge.
Place the refrigerated coconut cream in a mixing bowl. Add the icing sugar until soft peaks forms.
Decorate with whipped coconut cream, caramel syrup, fresh berries & mint.
Berry and fig topping
1-2 fresh figs
1 cup raspberries
1 can of chilled coconut cream
Method
Pour the coconut cream into a cooled bowl.
Beat slowly while adding the sugar until the cream thickens.
Layer the cream then the sliced fruit.
Decorate with caramel sauce.
