Nicolette's Greek Revani Cake
Another childhood favourite - a nice departure from the sickly sweet cakes and treats we are all used to. I love the orange essence and the light texture of the cake - in fact so light, you’ll find yourself eating a bit more than you should!
ORANGE SEMOLINA CAKE (Revani)
Ingredients
SYRUP
500 grams sugar
600 ml water
1 zest of orange
juice of one orange
cinnamon stick
4 cloves
CAKE
225 grams butter
200 grams sugar
6 eggs separated
120 grams flour
175 grams semolina
120 grams chopped almonds
1 tbsp baking powder
2 tbsp brandy
1 tsp vanilla essence
Method
1. Beat butter and sugar until light and fluffy.
2. Add your eggs yolks, one at a time, and in a separate bowl whisk your egg whites until soft peaks form.
3. Combine separately the flour, semolina, chopped almond and baking powder and add to the wet mixture along with brandy and vanilla.
4. Finally, fold in your egg whites.
Baking for 35 mins at 180 degrees
