Date Energy Balls
So I made some oreo truffle balls over Christmas and thought of making a recipe a bit more on the healthier side with these delicious date energy balls. They are packed with pecan nuts, almonds, coconut flakes and are great for an afternoon snack to get rid of your sugar craving. My husband is always
looking for different snacks to eat in the afternoon and these have been a big hit in the Cilliers household in Montpellier.

Ingredients
700 g Dates unseeded
200 g pecan nuts
200 g almonds
200 g coconut flakes unsweetened (100g keep aside outside of the date balls)
Method
1. Place all ingredients into a food mixer and blitz until semi fine. I like to keep the nuts into chopped pieces. Adds more crunch.
2. Take a teaspoon of the date mix and roll into a ball, complete with mixture until finished.
3. Roll each ball in some coconut flakes and voila. You can store in the fridge in a glass container.
