Curry Butternut and Sweet Potato Soup


It's freezing here in Montpellier, so I decided to make a big pot of Curry butternut and sweet potato soup with my Mother in law while she was visiting. This soup is packed with a lot of flavour. I like to add some crispy bacon and some cream to finish it off. Serve warm with a big french baguette.

Ingredients

2 leeks

1 butternut

1 onion

1 sweet potato

1 Chicken stock cube

2 tsp curry powder

1 tsp cinnamon

1 tsp chilli powder (optional)

Method

1. Thinly slice the leeks and the onion, saute in a big pot with some butter until cooked.

2. Peel and cut the butternut and sweet potato

3. Add 1/2 litre of warm water with a chicken stock cube to the pot along with the butternut and sweet potato

4. Mix all ingredients together

5. Add in the spices, Curry powder, cinnamon, and chilli powder

6. Boil the butternut and sweet potato until soft, season with salt and pepper

7. Using a hand blitzer, blitz up the vegetables until smooth and creamy

8. You can fry up some bacon bits and add to the soup when serving along with some cream.

Your soup can be stored in the freezer to heat up on another chilly day.
