Anri's Mielie Bread


Ingredients

1 cup flour

1.5 tsp baking powder

1 can of corn

1 can of sweetcorn

1 can of condensed milk

Method

1. Preheat your oven to 180 degrees

2. Grease a 9 inch cake pan

3. Sift your flour and baking powder in a bowl

4. Add in your sweet corn, corn and condensed milk, fold into your flour.

5. Pour the mielie mixture into the cake pan

6. Place in the oven for 50 minutes

I made this the other day thanks to Anri sharing her recipe with me. Pat had tried this Mielie bread at Anri and Wynand's house in Montpellier and came home and said I had to make it for him. The Mielie Bread has a few ingredients and is a very quick and easy recipe to follow. Great to eat with a meal or even as an afternoon snack.

I met Anri over a year ago in Montpellier and we have become very close friends. One of the hardest parts about living abroad is saying goodbye to friends that you have made being overseas, you really do create such special bonds with people in such a short amount of time. Pat and I loved spending time with Anri and Wynand and we were so sad saying goodbye to them in September when they left for Worcester. This is a picture of Anri and "Texico du Parc" her horse she rode in Nimes competing in a lot of horse riding competitions.

Anri writes "We moved to montpellier in 2012, and lived there for almost 3 years I am married to Wynand Olivier who played no 12 for Montpellier. Montpellier was our home away from home and we loved every moment there! I always wanted to learn French, and there is no better place then in France. My passion is horse riding, and I was fortunate to ride and compete in dressage and showjumping in Montpellier with the most amazing horse! "Texico du Parc" I also love to cook and learned a lot of new things about the french culture and the amazing food! So my days as a rugby wife was filled with french classes, horse riding , coffee with the ladies and some cooking! We travelled a lot, experienced the most amazing things, food,wine, culture and places. Met the most amazing people and I truly made best friends, had the most memorable moments of my life! We have now moved to Worcester England where Wynand plays for Worcester." Montpellier will always be part of my life! La belle vie!
