French toast with Mascarpone and cinnamon sugar

Ingredients

2 slices of white french bread

1 egg

1/4 cup milk

1 banana

1/2 cup Mascarpone or creme fresh or greek yogurt

1/4 cup cinnamon sugar ( 2 tbsp sugar, 1 tsp cinnamon)

1 tbls olive oil

Maple Syrup or Honey

So this is what I made for sunday breakfast yesterday and I thought I would share the recipe with you as it made the start to my sunday very good. Is there nothing better then waking up on a sunday morning to a french toast breakfast stack? Two thick slices of a white french bread loaf dipped in an eggy mixture, fried up on the pan and served with caramelized banana's and sprinkled with cinnamon and sugar and finally drizzled with a good helping of maple syrup.

I love this kind of breakfast, it is quick and easy to make and so satisfying.

Method

  1. Whisk the egg and milk together in a bowl, add the slices of white bread to the eggy mixture and poke little holes with a fork through the bread, Do the same with the other side. Make sure the bread is fully coated

  2. Once the bread is soaked, place on a hot pan with some oil, Fry until both sides are a slightly golden brown colour.

  3. In a second pan you can fry up the banana slices with some butter and a drizzle of maple syrup. Cook until slighty golden brown

  4. Once the french toast is cooked place on a plate to get stacked

  5. Decorate the french toast with sliced banana, a sprinkle of a cinnamon sugar mix and a dollop Mascarpone.

I like to add some parmegranates on top of the french toast stack. You can also drizzle over some honey or maple syrup.
