Carrot Cake

This is one of my favourite recipes that I love baking for my family. This carrot cake reminds me of home which makes it even more special to me. We were lucky enough to have family visiting this December for the holidays from South Africa and they brought with them one of the main ingredients for my cake which gives it that familiar taste of home. My husbands parents own a Pecan nut farm back in South Africa and they bought with them 2kgs of Pecan nuts for me to use in some of my recipes, I was so thrilled that I could bake this cake in Montpellier with Pecan nuts that were from South Africa, Combining ingredients from France with a touch of home.
Christmas Carrot Cake
Ingredients for One cake 24 cm cake tin
2 eggs
150 ml sunflower oil
200 g brown sugar
100 g pecan nuts chopped (leave some pecans for the top of the cake)
80 g pineapple chopped
300 g peeled and grated carrots
175 g flour
1 tsp bicarb soda
1 tsp cinnamon
Cream Cheese Icing
350 g cream cheese
1 tsp vanilla essence
250 g icing sugar
Method
1. Pre heat the oven to 180 degrees
2. Spread some butter in a 24 cm cake tin
3. Whisk the eggs in a large bowl, add the sugar, grated carrots, chopped pecans and chopped pineapple. I like to add some some pineapple juice to the mixture
4. Sift the remaining dry ingredients in a bowl and fold into the wet mixture, using a wooden spoon.
5. Pour the mixture into a cake tin
6. Bake in the oven for 50- 60 minutes until done, Check the cake with a skewer. The skewer should come out dry.
7. Allow the cake to cool on a cooling tray.
8. I like to make two cakes and place them on top of each other.
Cake icing
1. In a bowl combine the cream cheese, vanilla essence and icing sugar, mix well until creamy.
2. Spread over half the cream cheese over the top of the one cake, place the other cake on top and spread over the remaining cream cheese icing.
3. Sprinkle over the pecan nuts.
This cake is great for afternoon christmas tea with your family.
