Double Chocolate Mini Christmas Muffins
As promised here is the first recipe that I made for my Christmas High Tea.
These chocolate mini muffins are too delicious, and lets be honest not many people dislike chocolate.

Ingredients
12 mini muffins
125 g Plain flour
25 g Cocoa
1 tsp baking powder
200 g Dark chocolate
60 g sugar
2 tbsp oil
100 ml milk
1 egg
White chocolate cream cheese icing
125 g Philidelphia Cream Cheese
4 tbsp icing sugar
100 g melted white chocolate
12 cherries
Method
1. Mix the dry ingredients together in a bowl, sift the flour, cocoa and baking powder
2. In a seperate bowl, whisk the egg, milk, oil and sugar- combine well
3. Add the wet to the dry ingredients
4. Thinly slice the dark chocolate into bits and add to the muffin mixture
5. Grease the 12 mini muffin tin with some butter
6. Evenly spoon out the muffin mixture into the muffin tin using a teaspoon
7. Place the muffins in the oven, at 180 degrees for 20 -25 minutes
8. To check if they are ready place a toothpick in the middle of one of the muffins and in should come out clean.
9. Once the muffins are out the oven place them on a cooling tray
10. Now for the cream cheese icing. Which I love making. I'ts too yummy
11. Add the cream cheese into a bowl, along with some melted white chocolate, you can melt the chocolate in the microwave, combine together then add the icing sugar, mix well until smooth and creamy
12. Once the muffins are cooled you can add a spoonfull of cream cheese to the tops of the muffins and pop the christmas cherry on top.
